Apple Oatmeal Bars

Apple season has just about arrived with early varieties such as Paula Red, Vista Bella and Ginger Gold.

After stumbling upon some Paula Reds at a farm stand this week, I decided to bake something sort of healthy, but also something that would undoubtedly make my house smell like fall. Apple oatmeal bars (via Diethood.com) seemed like just the thing.

Here they are.

Ingredients

  • 1 cup rolled oats
  • 1-1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons of lemon zest
  • 3 tablespoons of Canola oil
  • 1 teaspoon ground cinnamon
  • 1 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/4 cup apple juice
  • 3 medium-size apples, peeled, cored, finely chopped (Variety: Paula Red)

Directions

Preheat oven to 350 F.

Put on your favorite movie to bake to…in my case, Jaws.

Lightly grease a (square) brownie pan with cooking spray. Set aside.

In a large mixing bowl sift together flour, baking powder, salt and cinnamon.

Stir in oats, brown sugar, lemon zest, and pecans. Mix well.

Peel, core and cut apples.

Add oil and apple juice; work it together with your hands until the mixture resembles coarse crumbs. If necessary, add more liquid.

Press a little more than half of mixture into bottom of brownie pan (I used enough to cover the pan).

Arrange apples over the mixture.

Sprinkle the remaining mixture over the apples.

Bake for 30-35 minutes or until apples are soft/tender and top is golden brown.

Enjoy the amazing smell of fall while you wait.
